Nduja and pepper
‘Nduja is a spreadable salami especially good enjoyed on a slice of bread. A local salami from Spilinga, a town in the province of Vibo Valentia, it's made with the pork fat and lots of chilli with everything being smoked inside the intenstine. Today 'Nduja is commonly used as a pizza topping or to flavour sauces.

Caciocavallo Silano
Pecorino di Monte Poro
Considered one of the best pecorino cheeses of southern Italy, the Monte Poro Pecorino cheese is produced in the province of Vibo Valentia and made with the milk of local
- sheep. It can be eaten either
fresh or aged: if aged for a long period a thicker crust from yellow, almost orange, and pale yellow paste develops. This ancient Calabrian cheese made of spun paste, from whole fresh milk. The shape is oval or conical and each Caciotta weighs 1 kg to 2.5 kg.
Tropea’s red onion
- One of the most popular
Calabrian typical products in Italy is Tropea’s red
- nion, IGP, it’s a sweeter
and milder type of onion than other varieties. The particular flavour comes from particular climatic and geographic conditions: as the land faces the sea and has a mild winter. Tropea is the beautiful village near the crystalline
- sea. There is a small island
- n the top of which we
can find Santa Maria’s church.
Typical cold cuts
- Capocollo' the "king" of
Calabrian cold cuts. The typical product is prepared using the upper portion of pork loin. The de-boned meat is salted, over 4 to 10 days, then washed with water and vinegar. With an ageing period of at least 100 days from salting.
Sopressata, or
suppizzata, this cured meat is made of lean meat and pork fat to which spicy chilli and fennel are usually added, although there are varieties made without.

In Calabria there are a lot of festivals, in fact in my village Rombiolo, there is the “aubergine sagra”, that is celebrated every year in the month of August.
The association that
- rganises this festival has
decided to celebrate this vegetable because in the past the farmers used to cultivate this product. During this festival, people dance “Tarantella” which is a popular dance.
Also in my village, Ciano, there is a festival : “ Maccarruna’s sagra”. This is a typical pasta hand made by the women of the village.
During the evening there are many games to which children and adults can participate.
«Pipi & Patati» Sagra
Sagra is a popular local festival that is held every year; sagras
are born from a religious traditional celebration, in occasion of a memorial of a Saint or a consecration, but they are used to celebrate the harvest or to promote a gastronomical local
product.
In Calabria, especially during summer months, are organised a lot of sagras with the aim of enhancing typical products; within those one of the most famous is “Pipi & Patati”’s Sagra that takes place in Vazzano, a town in the province of Vibo Valentia, by the middle of August every year.
“Pipi
and Patati”
represents one of the most typical recipes of popular Calabrian tradition. A dish based on vegetables, hot
peppers
and potatoes, emphasises the typical products of our land. Once upon a time the recipes was used to full bread, typical “Pitta
Chjina”
(pitta ripiena), as a meal when they went to work in the fields.
Vazzano is a village of more or
less 1.000 inhabitans in the municipality of Vibo Valentia. The economical activities of this town are concentrated
- n
agricolture
and
farming,
practised in the sorrounding fields.
